Afghani Aushak (Leek and Scallion Dumplings)By DarrenWe stole this recipe for Afghani Aushak (leek and scallion dumplings) from Tara's Multicultural Table. A simple and super tasty recipe that cheats by using wonton wrappers. These tasty leek and scallion dumplings are topped with a rich sauce of meat, tomato, and spices before a final drizzle of cool yogurt and mint sauce to round things out. We hope you'll give this recipe a try and hope that you enjoy it as much as we did. Cheers!
Afghani PulaoBy DarrenAs we begin our endeavor to cook an "authentic" meal from every country in the world, our first challenge is the cuisine of Afghanistan. In our area, the local Islamic Center hosts an annual International Food Festival, and we snagged their cookbook at our last visit, where we found this great Afghani Pulao recipe. We've never made an effort to differentiate the foods of the Middle-East, so this cookbook has been very helpful in identifying variations of different familiar dishes by country or region. While this pulao recipe is vegetarian, we understand that there are many other varieties that incorporate meats and other ingredients. Be sure to let us know what you think about this one.
Sunday Spaghetti BologneseBy DarrenWe learned to make this simple sauce in the heart of Italy at a Florentine cooking class. We were shocked to know that a traditional bolognese sauce doesn't actually have much tomato in it. Instead, it gets its rich, red color from a bit of tomato paste and some good Italian red wine. Simple ingredients slow simmered for hours, make for incredible depth in this ultimate comfort food. Served with fresh bread on top of high quality pasta, it really doesn't get much better than this. Plus, your house smells amazing for hours on end as this delicious sauce simmers away.
Quick and Easy Sausage Bean SoupBy DarrenOne of our go-to winter soups is this one from Taste of Home. This hearty Sausage Bean Soup is packed with flavor and oh-so-simple. Whip this up in a pinch, or let it simmer away on a lazy Sunday afternoon.
Best Homemade No Knead Bread RecipeBy DarrenOne of our favorite things about traveling abroad is the easy access to fresh bread. You just don't find high quality fresh bread with ease in the U.S. We sat out to figure out a way to make high quality bread with ease at home, and we stumbled upon the book, "Artisan Bread in 5 Minutes a Day."This recipe is derived from that book and designed with ease in mind. If done properly, you'll end up with a wetter than expected dough that doesn't require kneading. You'll have enough dough for 3 to 4 loaves, and the dough will hold up in the fridge for about 2 weeks. We hope you enjoy what we think is the Best No Knead Homemade Bread Recipe that you'll come across.
